The purpose of the alkalisation step (’Dutching’) is the acidity regulation of the cocoa beans for aroma enhancement and the production of differently coloured cocoa powders by reducing flavanols (natural plant dye of cacao).
Additionally, K2CO3 is used to lower the acidity of wine and serves as a drying agent for fruit processing, as well as in formulations for inks and toners, disinfectants and cleaning products.
