In wine production, potassium hydrogen carbonate is used to lower the acidity of wines by removing tartaric acid. The potassium ion reacts with the tartaric acid to form insoluble salt crystals (potassium tartrates), which can be easily separated by filtration. The carbonate is converted into CO2.
Additionally, potassium hydrogen carbonate is used in agriculture as a biological fungicide and as a fertiliser.
